"Above all, cooking is about giving, not without limit, but generously."

This quote, from Michael Sanders' "From Here You Can't See Paris," was said by Jacques Ratier, chef-owner of the restaurant "La Recreation" near my hometown of Puy L'Eveque. This quote reflects my own philosophy of cooking: every morning when I start the day in the kitchen, it is my ambition to create beauty and happiness. I feel fortunate that I can make my living doing this.

As a chef, I am still searching for my style. I guess I am a confused chef. The time I spent studying and working in France and the time I have spent in the United States has created a philosophical culinary "inner-struggle."

I love cooking the traditional French dishes, but I am also very curious about exploring the culinary world. This exploration goes against the intolerant traditional French cooking.

I really enjoy the "no rules" aspect of American cuisine. There are no wrong answers as long as the customer is satisfied; because at the end of the day, the experience of the customer is the most important culinary review.

We live in a world where the cosmetic is valued greater than substance. When cooking, flavor should be our foremost concern, our foundation. Only once that foundation is strong and secure, can we consider decoration. The cosmetic should never be the starting point for creating a dish.

I'm not sure a chef can be called an artist; a craftsman perhaps would be a more appropriate title. However, like an artist who gets joy from applause, it feels good to see people enjoying and appreciating our work.
